Hummingbird muffin

Ingredients
Original recipe by Nadia Lim
  • 2/3cup standard flour/gluten free flour
  • 1tsp cinnamon powder
  • 11/2 tsp baking soda mixed with 2 tbs warm milk
  • 2 eggs
  • 1 cup bananas mashed (approximately 2 large bananas)
  • 2/3 cup grated carrot 
  • 1/4 cup butter/coconut oil
  • 1/4 cup honey/ rice malt syrup
  • 1 tsp vanilla essence/paste
  • 2/3 cup pineapple chunks
  • Zest of 1 lemon/lime
  • 1/3 cup desiccated coconut
