- 2/3cup standard flour/gluten free flour
- 1tsp cinnamon powder
- 11/2 tsp baking soda mixed with 2 tbs warm milk
- 2 eggs
- 1 cup bananas mashed (approximately 2 large bananas)
- 2/3 cup grated carrot
- 1/4 cup butter/coconut oil
- 1/4 cup honey/ rice malt syrup
- 1 tsp vanilla essence/paste
- 2/3 cup pineapple chunks
- Zest of 1 lemon/lime
- 1/3 cup desiccated coconut
